    I had to look this one up as I asked their question "What is a brewery farm?" .. and I gather they grow their own hops for their beer that they serve at the Roost... an interesting set, Andrew I hope the participants enjoy the larger gallery .. I have to say that I'm sorry but I passed up that opportunity ... I'll look at what you post here ....

    WN, yes they grow their own hops located next to the brewery. They may grow all the other ingredients as well. I need to go back to the facility and get permission to go into the brewery and take some images of the kettles. I always find them interesting to look at through the windows, but you can not get a good view from there. Then I can ask some more questions regarding their growing. They also make kettle chips there. The new crop potatoes are not ready yet. The indoor judging was held in the part of the 'plant' that makes the kettle chips as it was vacant.

    Looks like a very interesting place to visit Andrew did u or do u get to try the food that’s being cooked 🙂

    The contestants were not allowed to 'sell' food. The Brewery has and indoor and outdoor restaurant!!! That said, while I was inside during the judging (restricted access only) there was some food left over that was not sampled by the judges as there were more pieces in the boxes or some than judges at the tables. The unsampled pieces were loaded into a tray and the 'helpers' inside clearing up after the judging got to eat whatever they wanted. There was no left over chicken!!! I did have a rib, some pulled pork, and a piece of brisket.

    During the cooking for the competition I don't think the competitors would have had time to prepare and sell food in any case. Some were up all night before the judging preparing their slow cooked meats. Some cooked more quickly at higher temperatures and only had to get up at 5 a.m.!

    A few more images and some explanation. The food presented to the judges was marked for presentation and taste. The food had to fit in a smallish cardboard take out container and had to be presented on a bed of kale. (I don't make the rules and have no idea why so save your breath!) Each competitor had to provide four different meats: chicken, ribs, pork, and brisket. From what I gather having seen the presentations, they could be any form or part of them prepared on a traditional barbeque or smoker.

    Note: Taking these images indoors under flourescent lighting with judges not holding still (other than one who went out of his way to accommodate me) was challenging and the images in general did not turn out well because the food was in motion and the lighting was less than ideal.

    I see they must take very very seriously as looking at ur other photos there where some big trophies up for grabs and some happy winners great photos Andrew is there prize money involved 🙂

    Paul, there was both prize money and bragging rights involved! I don't recall what the prize money was but it was $100 for some of the lesser prizes. No idea how the overall prize money was structured. Most of the competitors here were local but one of the teams came from Montreal (about an 8 h drive), one from Buffalo, one from Chapleau and Dubreuilville (northern Ontario and about a 13 h drive non stop). The more local teams from Windsor to the east side of Toronto. Teams involved from one person to many persons!

    As a point of interest only, my wife and I lived in Wawa, Ontario for little over ten months in 72/73. Dubreuilville was at that time a lumber town (French speaking) located about a half hour from Wawa off the the trans Canada highway on a dirt road about twenty miles inland. Now the road is paved, the lumber is done and gold mining is taking off. Chapleau is located north east of Wawa about 1.5 h by car.

    Now you've got me hungry (again)! The meat looks so good. Interesting with barbequed brisket. I don't think we do that. It's mostly brined. Must google that. Brisket is among my favourite cuts.

    I think you are too hard on your result, Andrew. The pictures look just fine. It looks like a lot of work you did. In fact, they look so good to me that while I was out today I stopped at Costco and bought 3 one pound slices of prime rib to roast as rib steaks. I put liquid hickory smoke, pepper, and raw bacon on them and roast them hot and fast in a convection oven to just pink in the middle. I will think of you whilst I enjoy the first one tonight. 🥩

    Thanks Rich. I am thirsty but too early for beer or coffee. I need to try to sleep! Not having a lot of luck. Not in pain but not able to sleep for unknown reasons! Bizarrely wired earlier and now finally tired.
