Legend has it that the adjacent river was fruitfully responsible for the rather whimsical name of this coastal town.

I believe it is on R.Nossa Sra. da Praia, Praia das Macas. Beach of apples and river of necklaces - Ribeira de Colares. Not that I know any Portuguese, that's what google translate tells me.
And of course, apple strudel...

Yes Bryan, Praia das Maçãs (Apple Beach).
As the story goes, during the autumn, the river would carry with it apples from the farms it ran through and they would wash up on the sands - thus giving the beach its name.

Colorado ?

Hmm, could be Colorado, but I'm a little skeptical. I'm not sure where you have a body of water to get that view, and most of the high rocky areas like that that I'm aware of are not usually conducive to the ATVs (but there's a lot of Colorado I'm not that familiar with so I could certainly be wrong).

Opposite side of the world

Not exactly opposite Colorado, but could it be overlooking Lake Wakatipu to Ben Lomond, Queenstown, New Zealand?

Ha ha. Getting very very close. A little bit more out of the way than that.

The Remarkables?

In 2006, Quad bike tours were operating out of the recently established Cardrona Adventure Park. Now Cardrona Horse Trekking & Quadbiking and, If that’s the right location, the old Polaris Predators (as in the photo) appear to have been replaced by a fleet of late model Yamaha 350-450cc Quad bikes - “to explore from the valley floor to the top of the Cardrona mountains.” Might be way off there though.
For many years I travelled that Cardrona Valley Road around eight times per year – providing the Crown Range Road was open – my favourite NZ alpine road.

You're in the right area, but the photos are a bit closer to the coast, and a bit further North. Wasn't a guided tour, just a few mates, and we actually got chased out 😁

Getting real close. It's a privately owned Ski field. A little bit East
